Lemony Salmon Piccata Recipe

SERVES FOUR

Prep Time: 15 Minutes | Cook Time: 10 minutes

INGREDIENTS

  • 4 (6 ounces) skinless salmon fillets

  • 1/2 teaspoon coarse salt

  • 1/2 teaspoon pepper

  • 3 tablespoons all-purpose flour

  • 2 tablespoons olive oil

  • 3 garlic cloves, minced

  • 1/4 cup dry white wine (such as sauvignon blanc)

  • 1/4 cup lemon juice (from about 2 lemons), plus lemon slices for garnish

  • 2 tablespoons capers, rinsed and drained

  • 2 tablespoons parsley, chopped

  • 2 teaspoons unsalted butter

DIRECTIONS

  1. Season salmon with salt and pepper and then coat salmon in flour in a shallow bowl.

  2. Heat oil in a pan over medium-high heat. Cook fillets, turning once, until golden (about 2 minutes).

  3. Reduce heat to medium, add garlic, and cook for 1 minute.

  4. Add wine, lemon juice, capers, and parsley to pan. Simmer over medium-low heat until fish is cooked through (about 5-6 minutes).

  5. Remove pan from heat. Add butter and stir until melted (about 30 seconds).

  6. Garnish with lemon slices and then top with sauce before serving.
